How does a pressure cooker actually work?

A pressure cooker is a little miracle worker for your kitchen. As with a normal pot, water is heated inside the cooker – but here is the clever bit: in a pressure cooker, the steam cannot escape because a valve keeps it sealed in. This builds up pressure inside the pot. The energy stays trapped, the temperature inside rises and hardly any heat is lost. The higher pressure means water does not boil at its usual 100 °C but at a significantly higher temperature, which shortens cooking times while saving energy and nutrients.
