Gingerbread & lingonberry jam cheesecake

This easy-to-make winter dessert with typically Swedish Christmas flavours is perfect for the festive season, and it only takes 10 minutes to whip up.

Ingredients:

Gingerbread & lingonberry jam cheesecake

  • 4 tbsp SYLT LINGON lingonberry jam
  • 16 KAFFEREP ginger thins with almonds
  • 200 ml cream
  • 200 g cream cheese
  • 2 1/2 tbsp icing sugar
  • 2 tsp vanilla sugar
  • 2 tbsp water

 

Topping

  • 100 ml lingonberries (or berries of your choice)

Step by step

  1. Whip cream, cream cheese, icing sugar, vanilla sugar andwater until fluffy. Add a little lemon juice or water if the mix is too thick.
  2. Crush the ginger thins into biscuit crumbs.
  3. Layer jam, biscuit crumbs and cream cheese fluff in beautiful glasses.
  4. Top with lingonberries or other berries that go well with ginger thins.

 

Tip!

Get your guests in the holiday spirit by flavouring the creamcheese fluff with cinnamon or cardamom.
