Christmas recipe: White chocolate macadamia cookies
Are you already in the Christmas and Guetzli mood? We definitely are with this recipe. Jeanette from @jea.ruh has created a Christmas recipe for you that not only goes well with warming chai tea and candlelight, but is also vegan and gluten-free.
You need:
Recipe for 18-20 pieces
- 200 g oat flour (or other gluten-free flour)
- 50 g tree nut flour (finely grind tree nuts in a food processor)
- 1 tsp vanilla sugar1 tsp cinnamon
- 1 pinch of salt
- 1 flaxseed egg (mix 1 tbsp. flaxseed with 3-4 tbsp. water. Leave to soak for 10 min)
- 100 g margarine melted
- 80 g birnel (or rice syrup)
- 100 g macadamia nuts, coarsely chopped
- 100 g white chocolate, chopped
- Handful of cranberries (optional)
Step 1
Mix the dry ingredients in a bowl.
Step 2
Add the flaxseed egg, liquid margarine and birnel. Mix with a hand mixer until uniform. Add the macadamia nuts and the white chocolate and mix in.
Step 3
Cover the dough and chill for 30-60 minutes. Line a baking tray with baking paper.
Step 4
Form equal-sized balls with your hands, place on the baking paper and press flat. Chill again for 30 minutes. In the meantime, preheat oven to 180 degrees.
Step 5
Bake for 10-12 minutes until golden brown. When baked for 10 minutes, they are still nice and soft inside.
