Spicy ginger mince noodles @cheftosca

Noodles are always a good idea! This super easy and delicious spicy ginger mince noodles recipe with VÄRLDSKLOK plant-based mince by @cheftosca will help you overcome the cold weather and warm up your heart this winter.

Ingredients

For the noodles

250g noodles, you can either use udon noodles

or thick rice noodles

50g VÄRLDSKLOK plant mince

2 garlic cloves

30g baby spinach

70g shiitake mushrooms

Olive oil 

For the sauce

1 large tsp miso paste

½ tsp red pepper paste or flakes

1 tbsp soy sauce

1 lime (juice)

10g fresh grated ginger

1 tbsp sesame oil 

Toppings

Fresh coriander

Sesame seeds

Spring onions

Lime or lemon zest

How to make:

1. Thaw the vegan mince overnight in the fridge. 

2. Thinly slice the garlic cloves and shiitake mushrooms. 

3. Brown them in a frying pan along with the vegan mince and some olive oil for a few minutes. 

4. Mix all ingredients for the sauce in a bowl and keep on the side. You can also use a high-speed blender to mix the ingredients and get a smoother sauce texture.

5. Cook the noodles as indicated on the packaging, drain them, and keep a little cooking water on the side just in case.

6. Add the noodles to the vegan mince a mushroom preparation and combine with the sauce on low heat. 

7. Add the baby spinach last, they will cook very fast when mixed in with the noodles. If the preparation is a little too dry, you can add the noodle cooking water to add some moisture.

8. Top with coriander, sesame seeds, spring onion, and little lime or lemon zest. 

Serve and enjoy!
