Rösti with pears, lingonberries and toasted walnuts @feedme_daily

Unlike potato pancakes, rösti (Swiss hash browns) don’t need eggs at all – they’re made of just potatoes, salt and pepper. To get our quick vegan recipe on the table in under 15 minutes, we used ready-made pre-fried IKEA RÖSTI. But it tastes just as delicious if you make the rösti from fresh ingredients using raw or cooked potatoes.

Rösti with pears, lingonberries and toasted walnuts

Ingredients for 4 servings

1 pack RÖSTI

1 jar of SYLT LINGON lingonberry spread

SMAKRIK butter-flavoured rapeseed oil

3 pears

80g walnuts

Salt, pepper

1. First roughly chop the walnuts with a knife and then slowly toast them in a pan without oil.

2. Wash, core and slice the pears. Heat the rapeseed oil in a frying pan and fry the pear slices in it for around 6–7 minutes, until they start to brown slightly. Season with salt and pepper.

3. In a second pan, cook the rösti on both sides for approx. 2–3 minutes. Alternatively, you can heat the rösti in the oven, but this will take a few minutes longer. Arrange on plates, place the fried pear slices on top and garnish with lingonberries and walnuts. And it’s done!
