Recipe: Vegan Strawberry Cheesecake @vanillacrunnch
Cheesecake always works. Vegan cheesecake too! @vanillacrunnch shows you how you can easily create a vegan and summery dessert for your next summer party with KAFFERP oat cookies and loads of strawberries.


What you need:
Base
- 200g KAFFERP cookies
- 80g vegan butter
Strawberry layer
- 200g strawberries
- 800g skyr or quark alternative
- 60 protein powder or custard powder
- 40g psyllium husks
- 50g coconut oil
- 100g ground birch sugar or powdered sugar
Step 1
Mix the cookies and butter in a blender.
Step 2
Press into springform pan and bake for about 10 minutes at 170 degrees.
Step 3
Mix all ingredients for the strawberry layer in the blender.
Step 4
Pour the mixture into the springform pan and smooth it out.
Step 5
Chill in the refrigerator. Decorate with strawberries and vegan cream.
