Recipe: Vegan Strawberry Naked Cake and Watermelon-Strawberry Lemonade @vanillacrunnch

Vegan Strawberry Naked Cake
Ingredients
Base
200g KAFFEREP biscuits
80g vegan butter
Biscuit
400g spelt flour, light
1 tsp baking powder
1 tsp baking soda
150g vegan butter
200g sugar
380ml oat milk
50ml sparkling water
½ tsp salt
Filling
750 g vegan quark or Skyr yoghurt
100 g sugar
300 g vegan cream
3 pck. cream stiffener
350 g strawberries
Layering
400g SYLT JORDGUBB strawberry jam. 200g per layer

Strawberries and Pistachios
Step 1
For the crispy base, finely mix the biscuits and butter and press onto the base of a 20cm springform pan. Bake at 180 degrees for about 8 minutes. Leave to cool and then spread 200g jam on top.
Step 2
For the biscuit, mix all ingredients in a bowl. Bake at 180 degrees convection for approx. 40 minutes. Leave to cool and divide into 3 layers.
Step 3
In a separate bowl, mix the quark and sugar together. Whip the cream with the cream stiffener until stiff.
Step 4
Now place one of the biscuit base layers on the jam layer, add strawberries and one layer of filling on top. Repeat it with the second base and third base. Add strawberries to the top layer and sprinkle with pistachios.
Step 5
Let chill in the refrigerator for several hours.
