Recipe: Vegan carrot soup with GÅNGLÅT potato pancakes @steffis_chuchichistli
Who says a vegan dish can't be simple and delicious at the same time? Discover the harmonious flavours of this vegan carrot soup in combination with GÅNGLÅT potato pancakes, created by @steffis_chuchichistli. Have fun trying it out!


Preparation
- Peel and roughly chop the carrots, onions and garlic cloves.
- Heat the olive oil in a pan. Sauté the onions and garlic in it. Then sauté the carrots briefly. Deglaze with the vegetable stock and add the bay leaf. Simmer over a medium heat for approx. 20 mins. until the carrots are cooked.
- Remove the bay leaf from the pan and puree the vegetables with a hand blender.Flavour the soup with salt and pepper. Optionally serve with some coconut milk and sprouts.
- Serve your vegan carrot soup with the delicious and also vegan GÅNGLÅT potato pancakes. You can simply fry them in a pan with a little oil. They go perfectly with it!
