Recipe: Vegan carrot soup with GÅNGLÅT potato pancakes @steffis_chuchichistli

Who says a vegan dish can't be simple and delicious at the same time? Discover the harmonious flavours of this vegan carrot soup in combination with GÅNGLÅT potato pancakes, created by @steffis_chuchichistli. Have fun trying it out!

Ingredients for 4 portions 

Carrot soup

650g carrots
2 pcs. onions
2 pcs. garlic cloves
2 tbsp olive oil
600 ml vegetable stock
1 pc. bay leaf
1 tsp salt
1/2 tsp pepper

Optional: some coconut milk & sprouts 

Side dish
1 pack of GÅNGLÅT potato pancakes
Vegetable oil 

Preparation

  1. Peel and roughly chop the carrots, onions and garlic cloves.
  2. Heat the olive oil in a pan. Sauté the onions and garlic in it. Then sauté the carrots briefly. Deglaze with the vegetable stock and add the bay leaf. Simmer over a medium heat for approx. 20 mins. until the carrots are cooked.

  3. Remove the bay leaf from the pan and puree the vegetables with a hand blender.Flavour the soup with salt and pepper. Optionally serve with some coconut milk and sprouts.

  4. Serve your vegan carrot soup with the delicious and also vegan GÅNGLÅT potato pancakes. You can simply fry them in a pan with a little oil. They go perfectly with it!
