Recipe: Vegan Banh Mi with HUVUDROLL @vegansofzuri

Picture this: perfectly cooked vegetable balls in a delicious hoisin sauce, nestled in a crispy baguette, garnished with fresh pickled vegetables, vegan mayo and a hint of chilli for an extra kick. Hungry? We are too! Let @vegansofzuri`s creation inspire you!

Ingredients
1 baguette
1 pack of HUVUDROLL plant balls
Hoisin sauce
Vegan mayonnaise
Red chilli, thinly sliced
Fresh coriander

Pickled vegetables
1/2 cup sliced carrots
1/2 cup sliced daikon radish and/or sliced cucumber
1/2 cup white vinegar
1/2 cup warm water
1 tablespoon sugar
3/4 teaspoon salt

Preparation

1. For the pickled vegetables, combine the carrots, daikon radish and cucumber slices in a container and mix with the vinegar and warm water. Pour 1 tablespoon of sugar and 3/4 teaspoon of salt over the mixture. Leave to stand for 1-2 hours.  

2. Cook HUVUDROLL plant balls according to the packet instructions. Once cooked, add hoisin sauce to taste until coated.

3 Cut the baguette into slices and spread one side with vegan mayo and the other side with hoisin sauce.

4. Place the hoisin-coated balls on the baguette.

5. Top with the pickled vegetables, sliced red chillies and fresh coriander.
