Recipe: Festive Christmas Focaccia @cheftosca

Ingredients

 

  • 350 g plain (all-purpose) flour
  • ¾ teaspoon salt
  • 1½ tablespoons sugar
  • 10.5 g instant yeast OR 30g fresh yeast
  • 225-270 ml extra virgin olive oil (divided)
  • 200 ml warm water3 cloves garlic (finely minced)
  • Fresh sage leaves
  • Olive oil for brushing before baking

Recipe

  1. Prepare the Dough: In a large bowl, mix the flour, salt, sugar, yeast, warm water, and 4 tablespoons olive oil. Lightly oil your hands and knead the dough until smooth (about 5-10 minutes).

  2. First Rise: Place the dough in a lightly oiled bowl, cover it, and leave it in a warm spot for 30 minutes.
  3. Shape the Dough: Grease a 30x10 cm baking dish with 3 tablespoons olive oil. Press the dough into the tin with oiled hands, spreading it evenly. Cover the dish and let the dough rest for 45 minutes.Add Flavor: Poke deep holes into the dough with your fingers. Brush it with olive oil, minced garlic, and chopped fresh sage leaves.

4. Decorate: Add rosemary sprigs, pepper ribbons, and radish slices for a festive and colorful touch.

5. Bake: Place the focaccia in a cold oven, then bake for 20-25 minutes at 200°C until golden and puffed. Drizzle with a little more olive oil when it comes out of the oven.Serve: Let the focaccia cool slightly, then serve warm or at room temperature.

Tip: Keep your hands lightly oiled to make working with the dough easier.

6.Serve the Joy: Slice up your Christmas Focaccia and serve it alongside soups, cheeses, or simply on its own with a drizzle of balsamic glaze. It’s the perfect addition to your holiday table and a creative way to celebrate the season.
