Layered Midsommar Berry Cake @cheftosca

Celebrate the Swedish summer with @cheftosca`s  berry layer cake – a must for your Midsommar party! Fresh berries and flowers make this vegan cake the highlight of every summer party. Get the taste of Midsommar right on your table!

Ingredients

Dry ingredients

300 g flour
12 g baking powder
100 g cornflour
200 g brown sugar
1 pinch of salt

Wet ingredients

20g apple cider vinegar
100 g vegan butter (melted)
400g apple puree
160g plant-based milk 

Icing

230 g vegan butter, softened to room temperature
360 g icing sugar
2-3 tablespoons vegan milk
1 teaspoon pure vanilla extract

Other

Berries (as desired for the cake and garnish)
Edible flowers, for garnishing

Preparation

  1. Preheat your oven to 180°C. Grease and flour two round 25 cm cake tins.
  2. In a large bowl, mix the flour, brown sugar, cornstarch, baking powder and salt.
  3. In a separate bowl, mix the melted vegan butter, apple sauce, plant-based milk and apple cider vinegar.
  4. Add the wet ingredients to the dry ingredients one by one and stir until everything is well mixed. Make sure not to mix too much. Add a handful of berries to the dough.
  5. Spread the dough evenly over the two prepared cake tins.
  6. Bake the cake in a preheated oven for 35-40 minutes, or until a toothpick inserted in the centre of the cake comes out clean
  7. .Leave the cakes to cool in the tins for about 10 minutes, then turn them out onto a wire rack to cool completely.
  8. In a large bowl, beat the softened vegan butter until creamy.
  9. Add the icing sugar gradually, beating well after each addition.
  10. Add the non-dairy milk a tablespoon at a time until the icing has the desired consistency.
  11. Fold in the vanilla extract
  12. .Pour the glaze into a piping bag with the desired tip. Place it in the fridge if the cake is not yet ready, or use it immediately.
  13. When the cakes have cooled completely, place one layer on a serving plate.
  14. Using the room temperature glaze, spread a layer of glaze on the first cake layer.
  15. Place the second cake layer on top and spread the remaining glaze evenly over the top and sides of the cake.
  16. Garnish the cake with more berries and flowers as desired.
  17. Slice the cake and serve at your Midsommar celebration.
