A colourful table for your Easter brunch
Even if the celebrations are perhaps a little smaller this year, an Easter brunch with a festive and spring-like table setting is not to be missed. After all, who doesn't love spending cosy time with the family and spoiling them with delicacies?

Recipe: Vegan plaited bunnies
For approx. 8-10 pieces depending on size
- 250 ml vegetable drink (e.g. soy drink)
- 5 g fresh yeast
- 50 g raw cane sugar
- 500 g wheat flour (plait flour)
- 1 tsp salt50 g vegan butter
- 50 g vegan sour cream
- 3 tbsp soy cream to spread
- Flour to work with
Step 1
Warm the vegetable drink to lukewarm and dissolve the yeast and sugar in it. Pour into a large bowl or food processor, add the flour, salt, butter and sour cream. Knead with the dough hook of the hand mixer, food processor or your hands until a smooth dough forms. Cover and leave in a warm place to rise for approx. 3-4 hrs until the dough has doubled in size.
Step 2
Then divide the dough on the lightly floured work surface into 8-10 pieces, roll each into a long snake and shape the bunnies, put on a small ball for the tail and place on a tray with baking paper. Brush with 3 tbsp. soy cream and leave to rise, covered, for approx. 30 min.
Step 3
Preheat the oven to 200°. Bake in the oven (bottom rack) for approx. 20-30 min.
