Recipe: Vegan and gluten-free berry tartlets @vanillacrunnch

Imagine sunny days, laughter and the joy of welcoming friends and family. What better way to celebrate than with a delicious dessert that tastes like summer? With this recipe from @vanillacrunnch you're guaranteed to capture the summer spirit!

Ingredients: 

Base

  • 80g dried cranberries
  • 80g ground almonds
  • 1 tbsp coconut oil  

Berry layer

  • 300g vegan Crème fraîche
  • Juice and zest of an organic lemon
  • 100g vegan white chocolate, melted
  • 20g dried strawberries
  • 100g berry jam of your choice
  • 200g vegan cream
  • 1 sachet cream stiffener

Step 1
Put all the ingredients for the base into the blender.

Step 2
Press the mixture into the silicone moulds with your fingers. 

Step 3
Mix all the ingredients for the berry mixture and pour into the moulds.

Step 4
Freeze for at least 6 hours or overnight. 

Step 5
Whip the vegan cream with cream stiffener. 

Step 6
Remove the tartlets from the mould and pour the whipped cream on top of the tartlets and decorate with flowers of your choice.
