Three home-made dessert recipes you’ll love baking

If cooking helps you relax and you can never say no to a dessert, this is for you. Here are a few home-made desserts that are an absolute must to add your recipe book, for you to indulge from time to time or to wow your guests.  

Finding the time to make a recipe you love is one of life’s great pleasures. This time, we encourage you to try out one of these desserts: banana bread, blueberry pie or spongy home-made muffins.  They’re perfect as desserts, for breakfast or even as a snack. Choose the one you like most, and get baking!  

1. Blueberry pie 


Ingredients: 

  • 350 g flour
  • 250 g butter
  • 100 g sugar  
  • Blueberry jam
  • 1 egg
  • 100 ml cold water

Method:  

1. Sift the flour together with the sugar into a bowl
2. Add the butter to the flour and gradually mix them together. It’s important that the butter is cold, and should be added straight from the fridge.  
3. Add cold water little by little (if needed, put it in the freezer beforehand) and continue mixing until you have an even dough.  
4. Divide the dough into two equal portions and roll them out with a rolling pin until they are each 15 cm in diameter.  
5. Put the dough in the fridge for at least 30 minutes.  

6. After 30 minutes, remove the dough from the fridge and place it on your work surface with a little flour to prevent it from sticking.  
7. Roll the dough out with a rolling pin until they are round and measure 30 cm in diameter and between 3 and 4 mm thick.  
8. Place one portion of dough into the tin as a base. Cut off any excess around the edges. 
9. Fill the pie crust with the blueberry jam.
10. Cut the other portion of dough into approximately 1 cm strips.  
11. Create a lattice pattern with the strips on top of the jam and seal them using a fork.  
12. Refrigerate the pie for 30 minutes.  
13. Preheat the oven to 190°C
14. Beat the egg yolk and brush it across the top of the pie with a pastry brush.  
15. Bake the pie for about 40 minutes until golden. 
16. Remove from the oven, allow to cool and enjoy!  

2. Banana nut bread


Ingredients: 

  • 1 banana 
  • 2 eggs 
  • 125 g oat flour
  • 100 g brown sugar 
  • A handful of walnuts
  • A handful of almonds
  • A handful of hazelnuts
  • 80 g butter
  • Cinnamon to taste
  • 1 packet of yeast

Method:  

1. Peel and chop the banana, then mash it in a bowl with a fork. 
2. In another bowl, use a whisk to mix the butter (almost melted) with the sugar until combined. 
3. Add the eggs and the banana. Continue mixing with the whisk. 
4. Preheat the oven to 170º C. 

5. Sift the flour together with the yeast and the cinnamon. Add this mixture gradually into the bowl with the rest of the ingredients. Combine until you have an even mixture.  
6. Grease the baking tin with butter and pour in the mixture.  
7. Add the nuts on top.  
8. Bake for 30 to 40 minutes. Then insert a toothpick or fork – if it comes out clean, the bread is done.  
9. Allow to rest for 10 to 15 minutes before removing it from the tin. 
 

3. Lemon vanilla muffins

Ingredients:  

  • 3 eggs
  • 200 g flour
  • 180 g sugar
  • 50 ml milk
  • 190 ml mild olive oil
  • 1 lemon
  • 1 packet of yeast
  • A pinch of salt
  • Vanilla extract

Method:  

1. Sift the flour and combine in a bowl together with the yeast and a pinch of salt. 
2. Grate the lemon zest into the same bowl and mix with the other ingredients. 
3. In another bowl, beat the eggs until foamy.  
4. Gradually add in the sugar and vanilla extract to taste. Continue to beat until well mixed.  
5. Add in the milk and continue to beat.  
6. Add the olive oil and continue to beat.  

7. Gradually add in the dry ingredients from the other bowl while continuing to beat. It is important that the batter is not lumpy. 
8. Once you have an even mixture, cover the bowl with cling film and allow to chill in the fridge for at least one hour.  
9. Preheat the oven to 210°C.
10. Remove the batter from the fridge and distribute it into muffin tins. Fill each tin three-quarters of the way, as the batter will rise in the oven. We recommend lining the tins with baking paper to prevent them from sticking and making them easier to remove.  
11. Sprinkle a little granulated sugar on top of the muffins, which will form a delicious crust once baked.  
12. Bake for 15 minutes at 210°C – use a toothpick to check that it has baked all the way through before removing from the oven. If it comes out clean, the muffins are ready! 
13. Allow to rest for five minutes before removing them from the tin. Afterwards, place them on a rack to cool.  
14. Serve with a cup of tea, coffee, or whatever beverage you like, and enjoy!
