Meet the chef

Meet Julio Fernández, our chef and creator of this delicious salmon and cod meatball recipe.

In his endeavours to become a top chef, he continues his Head Chef training at the Escuela de Hostelería y Turismo (School of Hospitality and Tourism - ESAH). And now… let’s get cooking! The first things you'll need to know are difficulty, preparation time and ingredients. So here you are.

Difficulty: easy

Preparation time: 30 min.

Standing time: 3 hours

Ingredients (serves four):

Method

As you will see below, this recipe is very easy and can be prepared in almost no time. Just follow the four steps below:

  1. First, prepare the dipping sauce for the meatballs. Lightly whip the cream, which should be cold so that it holds its shape, and then gently fold in the sweet mustard and dill sauce. Once mixed, pop it in the fridge.
  2. Sauté the salmon meatballs with the butter until they are nice and browned. Set them aside at room temperature.
  3. The next step will be to prepare the dressing for the cucumber salad. In a bowl, mix the yoghurt, finely chopped garlic, elderflower syrup, salt and black pepper.
  4. Then, cut the cucumber into strips using a peeler and finely slice the onion. Finally, combine the cucumber and onion with the dressing and pop it in the fridge until you are ready to serve.

To plate the dish, dress the salad and use it as a base. Then place five cooled salmon balls on top. Finish with the sweet mustard and dill sauce, some vegetable seaweed pearls and a sprinkling of fresh dill. The chef’s final trick: add some peanuts for a bit of crunch. You can crush them a little or toss them in whole — whatever suits you. And it’s ready! Enjoy!

Ideas for serving meatballs at the table

If you’re serving this dish to guests or for a special celebration, it's important to get the table right. Here are some tips for choosing the right tableware for your salmon meatballs!

The ideal dishes for plating this recipe are those made of transparent glass or featuring a light/pastel colour. Glass dishes are great at showing off all the healthy ingredients that make up this recipe. Meanwhile, wooden bowls, trays and boards help associate the dish with a natural and healthy diet. To showcase the main colours of this recipe, we recommend dishes and platters in white, grey or another soft colour, such as a pale pink.

The table decor also makes the food you serve look more appetising. We recommend using linens and napkins with a natural and neutral appearance. Choose either white or black cotton textiles.

As the saying goes, you eat with your eyes first!

Fancy another salmon meatball recipe?

If you love our salmon meatballs, but aren't a fan of some of the ingredients in this recipe, we have another very quick and easy option: salmon meatball wraps with hummus and avocado. They’ll take you less than thirty minutes!

The ingredients for 4 servings are:

  • 40 pieces (640 g) of HUVUDROLL salmon meatballs
  • 4 tbsp of hummus
  • 4 tortillas or similar types of flatbread
  • 2 avocados
  • 4 red onions
  • A handful of mint leaves
  • 1 tbsp of extra virgin olive oil
  • The juice of 1/2 lemon
  • Salt and black pepper to taste

This recipe is so easy it's a great option when you don't have much time. First of all, bake or fry the salmon meatballs as indicated on the packaging. Then place them on a piece of kitchen paper to remove the excess oil, cut them in half and let them cool before adding them to the wrap we are going to make.

Next, simply place the wrap on a board or plate, mash half of an avocado on top and spread on a bit of hummus.

The next step is to cut the onions into thin slices and add them to the wrap. Now add the meatballs, some mint leaves, a drizzle of olive oil, and salt and pepper to taste.

The last step is to roll up the tortilla tightly with the help of some baking paper.
