Fresh Basil Pesto Recipe
There’s something therapeutic about bashing and grinding a fresh authentic pesto with our ÄDELSTEN pestle and mortar. Roll up your sleeves and try the recipe below!
- 2 cloves of garlic, peeled
- 1/4 teaspoon salt
- 1/3 cup pine nuts
- 2 cups packed fresh basil leaves (2 large bunches)
- ½ cup extra-virgin olive oil
- ¼ cup grated Parmesan cheese
Steps
- Place garlic in the mortar and sprinkle with salt. Using the pestle, grind until garlic is mashed into a paste. Add the pine nuts and bash until combined.
- Add the basil leaves, a handful at a time. Bashing and pounding down, until all the basil leaves have been crushed into a fine paste.
- Add the grated Parmesan cheese, then slowly drizzle in the extra-virgin olive oil. Using the pestle, keep grinding until the ingredients become a smooth paste.
- Add extra salt, if needed. If desired, you can thin out the pesto with more olive oil.
Tip: Add more Parmesan if you’d like a creamier/cheesier pesto
