Veggie Bowl with Cabbage Salad & Hummus

Ingredients:

Veggie bowl

  • 1 pkg (8 pcs) GRÖNSAKSKAKA vegetable medallions
  • 1/2 cucumber
  • 2 oranges or other fruit
  • 1 pomegranate
  • 65 g lettuce

 

Red cabbage salad

  • 500g red cabbage
  • 1 lemon
  • 2 tbsp oil
  • Salt to taste

Hummus

  • 230 g chickpeas
  • 1/2 lemon juiced
  • 1 garlic clove
  • 4 tbsp neutral oil
  • 1 tsp cumin
  • 2 tbsp tahini paste
  • 2 tbsp water
  • Salt to taste

Step by step

  1. Begin by preparing the vegetable medallions according to thepackage instructions.
  2. Thinly slice the red cabbage, preferably with a mandolin. Mixin lemon juice and oil, and season with salt.
  3. Put all the ingredients for the hummus in a blender andseason with salt. If it feels too thick, thin it out with a little morewater.
  4. Cut the cucumber into long, thin sticks.
  5. Slice the oranges – or the fruit of your choice – into smallerpieces.
  6. Peel the pomegranate and carefully remove the seeds.
  7. Place all the ingredients in a bowl and top off with finelychopped parsley for garnish.
