Potato pancakes with lingonberries
Your whole family will love these easy-peasy potato pancakes with a super tasty onion sauce and a dollop of lingonberry jam. Perfect for lazy weekend brunches!

Ingredients:
Potato pancakes with lingonberries
- 600 g ALLEMANSRÄTTEN mashed potatoes
- 1 pkg ALLEMANSRÄTTEN savoury sauce mix
- SYLT JORDGUBB lingonberry jam
- 300 ml cold water
- 50 ml whipping cream
- 2 eggs
- 3 tbsp butter
- 2 onions
Step by step
- Prepare the mashed potatoes according to the instructions onthe package. Mix in the eggs and shape the mixture into smallpancakes.
- Fry the pancakes on medium heat in a frying pan with butteruntil they have a nice golden surface.
- Thinly slice the onions and fry them in butter until they aresoft and golden.
- Prepare the sauce according to the instructions on the package,then add the onions.
- Serve the pancakes with lingonberry jam or fresh lingonberries.
