Chinese version of VG10 stainless steelKaHardness: better than german steel or X50CrMoV15 Toughness: will get chip if you hit metal such as the edge of sink or cutting bone! Sharp edge retention: not exact like Japanese VG10 probably due to the heat treatment process, but good enough. Sharpening: good feeling, make it really sharp if using real Japanese 1000 grit whetstones. Not recommend to hone it on honing rod, will get micro chips due to its hardness. Weight: a bit heavy. The balance points is right for pinch grip, so you don't feel heavy that way. With this price point I highly recommend it!5
IKEA hidden a gem hereShawneyThis knife kinda blew me away by cutting through a raw roast like butter. It's interesting that IKEA carries this, especially since a real Damascus steel blade can easily cost in the hundreds.5
