A+ for edge retention and achieves a wicked edge using whetstonesAndrewSo, I bought this recently hoping for a cheap cleaver. Sadly it's no cleaver as it doesn't have the weight behind it. However, it's a specialist knife steel (not super high end) and the edge that I was able to obtain on it, is sharp enough to cut through paper towel. It's not as sharp as Japanese Blue or white steel, but it's a lot cheaper. However, the edge retention on these knives (provided you use whetstones to sharpen) is wicked. Full disclosure, I used a Shapton Kuromaku 320 grit stone, then a Naniwa Chosera Pro 1000 grit stone, then a Shapton Rockstar 2000 grit stone, then a Shapton Rockstar 6000 grit stone, then a shapton kuromaku 8000 grit stone, finishing on a Naniwa Advance 12000 grit stone for a mirror polished edge and then stopped on a Kangaroo leather strop with a 1 micron diamond emulsion and after 3 weeks of daily use, I only needed to strop it 5 passes in each direction and it's as sharp as I had it after sharpening on all the whetstones. 5
Sharp top edge cuts your hand when you use it.DannyWhile it’s a sharp knife and is very functional, the top of the blade is very sharp on the edges and cuts your hand when you use a normal grip. I think this could potentially hurt someone who was using it for a long time.2
365 Chinese chopperScottGreat chopper for the money, although it needed a touch up on the blade to remove burrs. Enjoying using it and Iron Cheffing my through the kitchen like a mofo.5
The product is excellentVilmaThe product is excellent5
CleaverSusangood grip and chops cleanly.5
Does the jobCarmenLove that it’s all metal cos I don’t have to worry about the handle falling off.5
handles really wellJulia/Uzygreat for chopping and picking up.5
Handle too shortSperoUnfortunately, the handle barely fits in my medium sized men's hand. This makes you hold the handle more in the centre of your palm, and then your fingers further up the blade, however the edges of the blade are very sharp, so overall, I have no idea why Ikea released such an unusable product.1
UnbelievableShailaSuper Sharp. Remains Sharp. Excellent material. Professional but reasonably affordable.5

Strong but very light weightLeLove this one! So light weight so it’s easy to manage. Cut through chicken bones like a dream! Doesnt fit in the Ikea Retratt knifes block though (I had to add extra magnets on the side to hold the knife).5

What is stainless steel?

Stainless steel is found in everything from building structures and cars to sinks and knives. It’s easy to see why it has so many uses. Stainless steel is hard and durable and has good resistance to corrosion – namely rust. It generally has a low nickel content, and for IKEA products we mainly use stainless steel that’s nickel-free. Like many other metals, it can be recycled again and again to become new, hardwearing things – without losing its valuable properties.

Quality

Quality with sharpness

IKEA 365+ knife is made of carefully selected molybdenum/vanadium steel. This means that it stays sharp for a very long time and that the blade is hard and flexible at the same time. The knife is also very hardwearing and easy to clean, as it is made of stainless steel. Together with timeless design, that makes the knife able to withstand being used everyday for many years. And that in turn makes cooking both easier and more fun for you.

Function solution

Well balanced and safe function

IKEA 365+ knife makes it both easier and more fun to cook. The grooves in the handle give a firm and secure grip that keeps the knife from slipping in your hand. It is also lightweight and pleasant to work with, because it is made in one single piece of stainless steel and therefore very well balanced. The knife is also easy to clean so you will both want and be able to use it every day, all year round.
