Scandinavian crispy shrimp sandwich
Babish turns a FRAKTA bag full of unexpected IKEA ingredients into a golden, pan-fried shrimp sandwich topped with tangy homemade tartar sauce.

Serves: 4
For the shrimp patties
- 2 bags SJÖRAPPORT shrimp, defrosted and minced
- 3 whole eggs, plus 1 egg white
- 2 tablespoons dill, chopped
- 1 lemon, zested
- 1 ¼ cups panko bread crumbs
- ¼ cup flour
- Kosher salt and black pepper, to taste
For the dill aioli
- 1 egg yolk
- 1 tablespoon lemon juice
- ½ cup neutral oil
- 2 tablespoons white onion, minced
- 1 tablespoon fresh dill
- 1 tablespoon dill pickles, chopped
- 1 tablespoon SÅS SENAP AND DILL sauce
- Kosher salt and black pepper, to taste
For serving
- Brioche buns, toasted
- Butter lettuce
- ROSTAD LÖK fried onions
Step by step
- In a large mixing bowl, add the shrimp, 2 whole eggs, 1 egg white, 1/4 cup panko, dill, lemon zest, salt and pepper and stir to combine. Using your hands, form the mixture into 4 evenly sized patties. Add the patties to a sheet tray lined with parchment paper. Freeze until firm, about 30 minutes.
- Meanwhile, in a medium mixing bowl, add the egg yolk and lemon juice. Whisk to combine, then slowly add the oil in a thin, steady stream until the mixture thickens. Stir in the onions, fresh dill, pickles and dill sauce. Season with salt and pepper. Cover and refrigerate until ready to serve.
- Set up a dredging station by placing flour in a wide, shallow bowl or plate. Beat remaining egg and 1 tablespoon of water in another shallow dish. Add remaining panko to a third dish. Working one at a time, dip the patty in the flour, gently shaking off any excess, then into the egg mixture, then into the panko mixture. Transfer to a plate until ready to cook. Repeat with remaining patties.
- Heat the oven to 350 degrees. In a large, carbon steel pan, heat 2 inches of oil over medium heat until it reaches about 350 degrees. Carefully place 2 patties in the pan, cooking until golden brown, about 2 minutes on each side. Transfer to a wire rack-lined sheet tray and sprinkle with salt. Transfer the patties to the oven until cooked through, about 10 minutes. Repeat with the remaining patties.
- Assemble. Spread the aioli on both sides of the bun, add a shrimp patty, then top with a few leaves of lettuce and fried onions. Serve immediately.
