Meatballs & tzatziki in Greek pita bread

Ingredients
Pita meatball sandwiches
10.6 oz (ca 20) HUVUDROLL meatballs
4 pita breads
3.5 oz feta cheese
1/2 red onion
Tzatziki
2/3 cup natural Greek yogurt 10%
1 small garlic clove, finely grated
1/2 cucumber, coarsely grated
1/2 tbsp lemon juice
Tomato and cucumber salad
3/4 cucumber
2 tomatoes
4 tbsp parsley, finely chopped
1 tsp dried oregano
1 tbsp lemon juice, freshly squeezed
1 tbsp olive oil
Step by step:
- For the tzatziki, use a grater to finely grate some cucumber, then squeeze out the liquid and mix with the other ingredients. Season with salt and pepper.
- For the tomato and cucumber salad, dice the cucumber and tomatoes, and place them in a bowl. Add crumbled dried oregano, finely chopped parsley, lemon juice, and olive oil. Season with salt and pepper.
- Slice the red onion into thin rings and set them aside.
- Fry the meatballs and heat the pita bread according to the package instructions.
- Split the pita breads in half and fill them with the tomato and cucumber salad, meatballs, tzatziki, crumbled feta cheese, and red onion.
