Great tool for any normal home chef, but plan to invest 15 minutes or more to restore a dull knifeMI'm not a trained chef - never sharpened those one sided sushi knives. But I've always kept my pocket knife sharp enough to shave my forearm, and even have a $1000 Tormek wet sharpener. So I know basic sharpening. And this is a precision tool and a wonderful value that anyone, with the right technique, can use to keep most kitchen knives plenty sharp. I think bad reviews trace to wobbling the knife left and right in the v-shaped slot. That movement won't control the precise angle of the edge, and could split and break the stones. Another goof is to lift the knife and let it down not in the stones' groove but on the flat part to either side. The force implied by the picture is too much; slow and easy does it. Stand directly over the tool looking down the back of the knife to see any wobble. I hold the tool lower as to use a finger on the knife back to steady any wobble. Consistent angle is key. If a knife's edge shines from cutting on marble, etc. it will take time. Be patient!5
