Meatballs & tzatziki in Greek pita bread

Your whole family will love this build-your-own meatballs and pita bread recipe! Made with simple, flavourful and fresh ingredients, it’s perfect for summer picnics and dinners.

Ingredients

Pita meatball sandwiches

300 g (ca 20) HUVUDROLL meatballs

4 pita breads

100 g feta cheese

1/2 red onion

 

Tzatziki

1 1/2 dl natural Greek yoghurt 10%

1 small garlic clove, finely grated

1/2 cucumber, coarsely grated

1/2 tbsp lemon juice

 

Tomato and cucumber salad

3/4 cucumber

2 tomatoes

4 tbsp parsley, finely chopped

1 tsp dried oregano

1 tbsp lemon juice, freshly squeezed

1 tbsp olive oil

Step by step:

  1. For the tzatziki, use a grater to finely grate some cucumber, then squeeze out the liquid and mix with the other ingredients. Season with salt and pepper.
  2. For the tomato and cucumber salad, dice the cucumber and tomatoes, and place them in a bowl. Add crumbled dried oregano, finely chopped parsley, lemon juice, and olive oil. Season with salt and pepper.
  3. Slice the red onion into thin rings and set them aside.
  4. Fry the meatballs and heat the pita bread according to the package instructions. 
  5. Split the pita breads in half and fill them with the tomato and cucumber salad, meatballs, tzatziki, crumbled feta cheese, and red onion.
