Draft cake with raspberries, meringue and white chocolate
An irresistible draft cake beautifully topped for the party with red raspberries and piped white chocolate ganache.
STEP BY STEP:
GANACHE
- Chop the chocolate roughly.
- Boil the cream in a saucepan and remove from the hob.
- Stir in the chocolate until it melts.
- Allow the chocolate mass to cool at room temperature until it has a good consistency for piping.
CHOCOLATE CREAM
- Chop the chocolate finely.
- Whip the cream.
- Stir the chocolate into the cream.
FINAL PREPARATION
- Place one draft cake on a plate.
- Crush a layer of meringue over it.
- Spread on the chocolate cream.
- Top with a layer of fresh raspberries.
- Place the second draft cake on top.
- Pipe the chocolate ganache.
- Top with the rest of the raspberries.
