Draft cake with raspberries, meringue and white chocolate

An irresistible draft cake beautifully topped for the party with red raspberries and piped white chocolate ganache. 

SERVES 6

INGREDIENTS:

2 KAFFEREP gooey chocolate cake

50 g meringue

350 g raspberries  

GANACHE

200 g BELÖNING white chocolate tablet with raspberries

1 dl whipping cream  

CHOCOLATE CREAM

50 g chocolate of choice

2 dl whipping cream

STEP BY STEP:

GANACHE

  1. Chop the chocolate roughly.
  2. Boil the cream in a saucepan and remove from the hob.
  3. Stir in the chocolate until it melts.
  4. Allow the chocolate mass to cool at room temperature until it has a good consistency for piping. 

CHOCOLATE CREAM

  1. Chop the chocolate finely.
  2. Whip the cream.
  3. Stir the chocolate into the cream. 

FINAL PREPARATION

  1. Place one draft cake on a plate.
  2. Crush a layer of meringue over it.
  3. Spread on the chocolate cream.
  4. Top with a layer of fresh raspberries.
  5. Place the second draft cake on top.
  6. Pipe the chocolate ganache.
  7. Top with the rest of the raspberries.
