Steam like a pro

What are the benefits of steam in an oven, and how can the different steam functions be used? We asked the one co-worker who probably knows the most about cooking – our very own IKEA head chef.

Daniel Yngvesson, food designer by title, helps develop both the food items you can purchase in the Swedish Food Market and the dishes you order in the restaurant – overseeing everything from plating to how aromas, flavours and textures are experienced and enjoyed. As a professional chef, he’s been using steam for years. Now that it’s available for home kitchens, he couldn’t be more excited. “Steam makes so many things easier, tastier and better. Cooking just becomes more fun!”

Steam preserves taste and nutrients

There are several steam functions that meet different needs. “Generally speaking, steam gives juiciness but not a crust. So if, for example, you want to cook chicken, it’s a good idea to start with a combination of steam and convection, then finish off using just convection or the grill function. This makes the meat juicy with a crispy, browned surface,” Daniel explains. Full steam provides gentler cooking compared to conventional oven cooking without steam, as the temperature is lower and the cooking time shorter – which also saves energy. “When you steam vegetables like broccoli, they keep their texture and flavour – and compared to boiling, where vitamins and minerals easily end up in the water, steaming helps preserve more of the nutrients too.”

Dare to experiment in the kitchen

Here’s a tip: cook rice using full steam in the oven – instead of on the stove. “It has a lot of advantages. There’s no risk of it boiling over or burning, and there are fewer dishes afterwards if you cook it directly in an ovenproof serving dish. For the best result, I usually go with equal parts rice and water.” Daniel’s best advice is to dare to experiment and try things out. “There are so many possibilities, and once you start using steam, you almost get addicted.” Daniel says, smiling.
