Oven-Roasted Salmon with Charred Broccoli & Grains

    Step by step:

    1. Preheat oven to 500 degrees
    2. Cut broccoli florets in half
    3. Toss with salt, pepper, and olive oil
    4. Arrange broccoli cut side down on sheet pan, leaving room to add salmon
    5. Roast for 10-12 minutes until lightly charred
    6. While Broccoli is roasting, dry salmon with clean towel, season with salt and pepper and brush with olive oil
    7. Reduce oven temperature to 275 degrees
    8. Add salmon to empty part of sheet pan with broccoli and roast for 10-12 more minutes
    9. Use leftovers to make “hot” and “cold” lunches!
