Gingerbread royal icing

Ingredients:

3 3/4 cup confectioners sugar
3 large egg whites
1/2 tsp cream of tartar
Pinch kosher salt
Food coloring (optional)

Step by step:

  1. In the bowl of an electric mixer, combine the sugar, egg whites, cream of tartar and salt. Whisk until stiff and glossy.
  2. If using food coloring, divide into small bowls. Using a rubber spatula, stir in desired food colors. Cover any bowls you aren’t using with plastic wrap – the frosting dries out very quickly.
  3. Transfer icing to a paper cone, pastry bag, or plastic bag with a bottom corner cut off at an angle.
