Gingerbread royal icing
3 3/4 cup confectioners sugar
3 large egg whites
1/2 tsp cream of tartar
Pinch kosher salt
Food coloring (optional)
Step by step:
- In the bowl of an electric mixer, combine the sugar, egg whites, cream of tartar and salt. Whisk until stiff and glossy.
- If using food coloring, divide into small bowls. Using a rubber spatula, stir in desired food colors. Cover any bowls you aren’t using with plastic wrap – the frosting dries out very quickly.
- Transfer icing to a paper cone, pastry bag, or plastic bag with a bottom corner cut off at an angle.
