Green power juice

Makes approx 1 liter
Ingredients
1 cucumber • 4 sticks celery • 5 apples • 3-4 handfuls spinach • 2 limes • Fresh ginger, to taste
Method

  1. Rinse ingredients and peel the limes.
  2. Run everything through your juicer.
  3. Serve in a glass carafe to show off the rich green color of the juice.

Layered chia pudding

Makes 4 small glasses
Ingredients
For the pudding layer:
3 tablespoons chia seeds • 1/2 cup coconut milk • 1/2 cup unsweetened nut milk, oat milk or water • 2 drops stevia or 1 tablespoon honey, agave or maple syrup • 1/2 teaspoon vanilla powder • 1 pinch salt
For the smoothie layer:
1 banana • 3/4 cup raspberries • 1/4 cup blueberries • 1-2 tablespoons water
For the bottom layer:
4 teaspoons almond butter
Method

  1. Mix the ingredients for the pudding layer and leave to stand in the fridge for 30-60 minutes. Give it a stir every now and then so it doesn’t form clumps.
  2. Mix the smoothie and put it to one side.
  3. Place a teaspoon of almond butter at the bottom of each glass, add a layer of the chia pudding and top with the smoothie.

Raw cashew cream with thyme

Makes one small bowl
Ingredients
1 1/2 cups raw unsalted cashews • 2 tablespoons freshly squeezed lemon juice
3-4 tablespoons apple cider vinegar • 1 pinch salt • Water as needed, depending on desired consistency • 1/2 handful fresh thyme
Method

  1. Soak the cashews in water for at least two hours (the longer the better).
  2. Rinse the cashews and put them in a blender with all the other ingredients.
  3. Blend to a smooth paste, adding water as necessary – a thicker cream works well as a sandwich spread, while a runnier one is great as a dip or with stews and salads.
  4. Flavor your cream with whatever you like – we chose thyme, but you can make it savory or sweet. From mustard seeds to vanilla, get creative!
  5. Store the cream in a sealed container in the fridge – it will last for about five days.

“We made a conscious choice to try to live as healthily as possible and do as little harm to the planet as possible,” says Jakob. “One of the keys was changing the way we ate.” Jakob’s girlfriend, Mia, was always into healthy eating. Jakob, not so much, until he was diagnosed with cancer a few years back. His treatment was successful, but the ordeal prompted a lifestyle change for them both.
