SARA’S SIMPLE RHUBARB PIE
½ teaspoon baking powder
1 teaspoon vanilla essence
3 rhubarb stalks, roughly chopped
1. Weigh and measure all your ingredients, then combine oats, sugar, flour and baking powder in a bowl.
2. Melt butter, adding cream, syrup and vanilla essence. Add mixture to dry ingredients and mix it all together.
3. Place rhubarb pieces in a shallow oven dish, pour over mixture and bake in the oven (100°C) for 40mins.
‘This is a recipe that I return to throughout the year. I use pre-cut frozen rhubarb straight from the freezer, but you can use apples instead of rhubarb as the seasons change’
