How to make a simple rhubarb pie

When we visited Sara (see her home here), she shared this delicious recipe. ‘In Spring, a friend of mine gives me rhubarb from her garden and I freeze it so I can use it all year round,’ she says. ‘This recipe is so easy to make – you get all the taste and comfort of baking with just 10 minutes’ preparation.’ What’s your favourite #littlething recipe?

Sara’s simple recipe for rhubarb pie


Serves 4-6
200g oats
200g sugar
175g flour
½ teaspoon baking powder
125g butter
50ml cream
50ml syrup
1 teaspoon vanilla essence
3 rhubarb stalks, roughly chopped

Sara’s ingredients

1. Weigh and measure all your ingredients, then combine oats, sugar, flour and baking powder in a bowl.

2. Melt butter, adding cream, syrup and vanilla essence. Add mixture to dry ingredients and mix it all together.

Bake for 40 minutes

3. Place rhubarb pieces in a shallow oven dish, pour over mixture and bake in the oven (100°C) for 40mins.

‘This is a recipe that I return to throughout the year. I use pre-cut frozen rhubarb straight from the freezer, but you can use apples instead of rhubarb as the seasons change’
