Enjoying rhubarb requires sugar to balance the intense tartness of the plant. That’s why it wasn’t until the 17th century, as sugar became available to common people, that rhubarb got a foothold in Europe. Its popularity grew and today the fresh taste of rhubarb is always appreciated in Sweden. To most Swedes, the taste is intimately associated with summer, but it tastes just as good all the year round!
Mix with water (1:6) as a table drink, or use as the base in different drinks.

Pancake Cake
Experience the Swedish Midsummer celebration at home by making your very own pancake cake - a traditional Swedish dessert.
This is what you need (serves 4)
● 8 PANNKAKOR pancakes
● 10 oz. whipping cream
● 20 fresh strawberries
● 6 oz. strawberry jam
● Confectioners sugar
● 1 sprig of fresh mint
This is how you do it
● Thaw the pancakes.
● Whip the cream.
● Rinse the strawberries, remove the leaves and stems.
● Cut the strawberries in halves.
Make alternate layers of pancakes, whipped cream and jam. Put a lot of strawberries on top, sprinkle with confectioners sugar and garnish with a sprig of freshly cut mint.
